Cheesy Baked Mixed Vegetables

Mixed vegetables are not only nutritious but also help in making scrumptious recipes in different forms. Today's recipe includes loads of healthy vegetables baked to perfection for a cheesy texture. You can include local vegetables replacing the ones mentioned in the ingredients list. Avoid adding those vegetables in this recipe which release lot of water or moisture during cooking. Sprinkling of semolina on the upper layer helps in making a crunchy crust during baking. I prefer to serve this recipe with rice and vegetable stew. You can easily keep these baked vegetables refrigerated for up to two days. Let's make this yummy, delicious and irresistible vegan recipe in a few easy steps.
