Vegetarians can use mushrooms instead of boneless chicken. The consistency of this soup is thin since we avoid cream or cheese for the base. Depending on your taste, you may add some more spice and tangy flavor in this soup. Instead of chicken, you can also use seafood to get a slightly different flavor. Use short grain rice for this soup to get the best texture. You can also serve this soup with steamed rice or bread. The leftovers of this soup can be included in a stew with some added spices.
