Although my kids do not love eggplants, I simply enjoy them in any form. Here they're available in several colors viz., light purple, dark purple, light grayish, white and green. The most popular variant is of course dark purple. Fried eggplants can be cooked in different ways. Use round eggplants for making such recipe to get the best results. The combination of cheese and honey may sound odd, but they compliment each other so well, if mixed in a correct way. I've pan-fried these eggplants though you can grill or bake them too in a microwave. The same process can be repeated with zucchini chips. I love to stuff these slices between my morning sandwiches. Tender pan fried eggplant slices

Try this simple yet extremely delicious recipe made by frying eggplant slices with honey and cheese which gives it a totally unique and amazing flavor.

Preparation Time: 20 minutes
Cooking time: 10 minutes
Servings: 5

Ingredients:
  • 500 gm eggplants (nice and big)
  • 1/2 cup processed cheese (grated)
  • 100 gm honey
  • 1/4 tsp black pepper powder
  • 1/4 tsp garlic powder
  • 8 to 10 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Wash all the eggplants and cut thin and even slices.
  2. Keep the slices in cold water until they're ready for frying.
  3. Take a large and flat grill pan and sprinkle generous amount of olive oil on its base.
  4. Take out all the slices on a flat plate and sprinkle black pepper powder, garlic powder and salt on both the sides of each slice.
  5. Place each slice in the grill pan and sprinkle grated cheese on the top side of each slice.
  6. Saute the bottom part for about a minute and flip the cheese covered side to the bottom.
  7. Repeat the same process for the slightly sautéed top side and bring down from the flame.
  8. Place all the fried slices in the serving plate.
  9. Sprinkle generous amount of honey on top of the slices.
  10. Serve immediately with garlic bread.
