This is one of the favorite recipes my family loves to eat. Vermicelli cooks instantly and so does boneless chicken. All you need is some added vegetables with the right balance of local herbs and spices. If you are cooking a spicy vegetable stew, leftovers of this recipe can be added in that. You can also add prawns or squids in this recipe after stir frying them in soy and fish sauce. Since this recipe is light, you can add some chili flakes for added fiery texture. Instead of vermicelli, you can also use classic spaghetti provided it is served hot. You can easily refrigerate this recipe for up to 24 hours and can serve with quickly stir frying in your favorite sauce. Let's make this delicious, light and flavorful recipe.

Fulfilling rice and vermicelli

Make this complete meal which includes boneless chicken, vermicelli and served with fresh bell pepper strips and loads of herbs and spices for added flavor.

Ingredients:
  • 350 gm boneless chicken (chopped)
  • 200 gm vermicelli
  • 300 gm red bell peppers (thin slices)
  • 1/2 cup cabbage (shredded)
  • 1/5 tsp white pepper powder
  • 1/2 tsp light soy sauce
  • pinch of sugar
  • pinch of chili flakes
  • few drops of sesame oil
  • small bunch of fresh coriander
  • 1 tsp refined oil
  • salt to taste

Instructions:

  1. Boil vermicelli in half a liter of water for about 3 minutes.
  2. Cook chopped boneless chicken in a pressure cooker for about 6 minutes with half a liter of water.
  3. Drain excess water and keep both vermicelli and chicken aside.
  4. Heat refined oil in a flat nonstick pan.
  5. Add boiled chicken with light soy sauce and saute for about a minute.
  6. Add bell peppers, cabbage, white pepper powder, sugar, chili flakes and salt.
  7. Toss it well for half a minute and add boiled vermicelli.
  8. Add fresh coriander leaves and toss once more.
  9. Switch off the flame and add sesame oil.
  10. Once toss again gently and mix all the ingredients with a spatula.
  11. Serve hot with coffee or with a chilled soft drink.
