It's an open secret that charcoal grilled meat tastes much better than the meat grilled in an electric appliance. Following recipe has the required spark to make you lick your fingers. It has tender chicken meat coated with spicy marinade topped on blanched and seasoned spinach with equally tasty cracked wheat base. To get the best results, make deep cuts in the chicken and keep the marinated chicken for at least an hour before grilling. The same ingredients can be used to prepare grilled prawns too. To make it more exotic, pour some honey and chili flakes on hot and grilled pieces right before serving. Let's make this spicy, smoky and juicy chicken filled with irresistible and aromatic flavors.

Multi-layered grilled chicken

Try out this lip smacking main course entry consisting of spicy grilled chicken with blanched spinach and equally delicious cracked wheat flavored with spices.

Ingredients:
  • 1 kg chicken
  • 400 gm spinach
  • 1 cup cracked wheat
  • 1/2 tsp cayenne pepper powder
  • 1 tsp cumin seeds powder (roasted)
  • 1 tsp coriander seeds powder (roasted)
  • 1 tsp dried mint leaves powder
  • 1/4 tsp white pepper powder
  • 1 tsp semolina
  • 1/2 cup whipped curd
  • pinch of cloves powder
  • pinch of black pepper
  • 1/4 tsp chili flakes
  • 150 gm tomato puree
  • 2 tsp lime juice
  • 1/4 cup extra virgin olive oil
  • salt to taste

Instructions:

  1. Soak cracked wheat overnight with 2 glasses of water.
  2. Wash all the chicken pieces and make slits with sharp knife.
  3. Take a large bowl and pour whipped curd in it with chicken pieces.
  4. Add cayenne pepper powder, cumin seeds powder, coriander seeds powder, dried mint powder, white pepper powder, semolina, cloves powder, lime juice and salt in it.
  5. Mix all the ingredients with hands for about 3 to 4 minutes and cover with aluminum foil.
  6. Refrigerate the marinated chicken for about 10 minutes.
  7. Meanwhile, blanch spinach and keep aside.
  8. Take a sauce pan and heat 3 tsp olive oil in it.
  9. Add tomato puree with soaked wheat.
  10. Simmer it slowly on a low flame for about 5 minutes.
  11. Add chili flakes, black pepper and salt.
  12. Add half glass of water and simmer for about 20 minutes with a close lid.
  13. Sprinkle black pepper and salt on blanched spinach and saute for about half a minute in one tsp of olive oil.
  14. Take out the marinated chicken from refrigerator and add generous amount of olive oil in it.
  15. Once mix it again with a spatula.
  16. Prepare a charcoal grill to maximum heat.
  17. Grill all the marinated pieces from all sides for 6 to 8 minutes on each side.
  18. Place a scoopful of cracked wheat on the serving plate and top it with a layer of seasoned and blanched spinach.
  19. Finally place hot and spicy grilled chicken on top and serve immediately.
