This nutritious salad is ideal for summer season. The French brie cheese used in this salad is optional and can be replaced by a local cheese of your choice. Make sure, the cheese used for this salad melts easily and have a moist texture. Both green as well as black olives can be used in this salad provided they're fresh and tangy. Cherry tomatoes can also be included in this salad as they compliment water melon very well. Water melon tends to release moisture quite fast so you must consume this salad on the same day. Ingredients:
  • 500 gm watermelon (sliced)
  • 1/2 cup green olives
  • 250 gm brie cheese
  • 1/2 tsp sesame oil
  • 1/4 tsp chili oil
  • pinch of clove powder
  • coriander (finely chopped)
  • thyme (finely chopped)
  • 1/4 cup extra virgin olive oil
  • pinch of salt

Instructions:

  1. Soak green olives in extra virgin olive oil overnight.
  2. Take a large salad bowl and add watermelon pieces in it.
  3. Make small pieces of brie cheese with your hands.
  4. Add olives in the bowl and toss well.
  5. Take a small bowl and add sesame oil, chili oil, clove powder and salt in it.
  6. Mix it well with a spoon.
  7. Pour it over the salad base of melon and olives.
  8. Mix well with a spatula and finally add brie cheese pieces.
  9. Right before serving, sprinkle chopped coriander and thyme on top.
  10. You can serve this salad after refrigerating for half an hour too.
