Making fish fritters is a delicate task because they tend to break if not made correctly. Although red snapper's meat is quite firm, the minced form of any fish is quite delicate when deep fried with a batter. Today's fish fritters are spicy and crispy at the same time. To increase the number of servings, I've used white beans as a base. You can use a different base provided it blends well with the fish mince. To prepare a milder version of these fritters, replace red curry paste with simple red chilies soaked in water overnight. Use of select herbs gives these fritters a unique taste and helps in digestion too. You can use a local fish instead of red snapper provided it is fresh and odorless. Let's make it now!

Crisp fried red snapper fritters

Try these unique and crispy red snapper fritters which are prepared with beans and red curry paste to give it an amazing and tasty flavor for your taste buds.

Preparation Time: 30 minutes
Cooking time: 40 minutes
Servings: 6

Ingredients:
  • 400 gm red snapper (boiled and minced)
  • 1 cup white beans (soaked overnight)
  • 3 tsp Thai red curry paste
  • 5 to 6 kaffir lime leaves (finely chopped)
  • 50 gm onion paste
  • 1 tsp ginger garlic paste
  • pinch of white pepper
  • 1/4 cup groundnuts (coarsely ground)
  • 1/2 cup corn flour
  • 1/4 cup breadcrumbs
  • refined oil for deep frying
  • salt to taste

Instructions:

  1. Boil white beans in half a liter of water for about 15 minutes.
  2. Drain excess water and mash them in a blender.
  3. Take a large bowl and add mashed beans and minced red snapper in it.
  4. Mix both the ingredients well with a spatula.
  5. Add red Thai curry paste, chopped kaffir lime leaves, onion paste, ginger garlic paste, white pepper powder, crushed groundnuts and salt in it.
  6. Mix all the ingredients with your hands and make fritters in your desired shape.
  7. Add half glass of water in corn flour and whip it into a slightly thick batter.
  8. Spread the breadcrumbs on a flat plate.
  9. Heat oil in a deep frying pan.
  10. Dip each fish fritter in corn flour batter and roll them on the breadcrumbs.
  11. Immediately fry them in the oil till they turn golden brown.
  12. Serve hot with sliced cucumber and a tangy sauce.
