The more colorful is rice recipe, the more it is irresistible. That's what we're going to do today by making a nice colorful rice preparation. Boiled corn is one of my favorite ingredients and I love to use them in different kinds of cuisines. Similarly carrots tend to blend very well in large number of recipes. Instead of taking short grain rice as I've used in this recipe, you can opt for long grain rice. Non vegetarians can add shrimps or boneless chicken in this recipe. I generally serve this recipe with curried vegetables. Broccoli can also be added in this tasty recipe provided you steam it and add at the last moment. Leftovers of this rice can be easily stuffed in tacos and patties with some added spices.

Delicious vegetable fried rice

Do try this nutritious and tasty fried rice which includes different types of vegetables making it a complete and fulfilling meal with an amazing flavor.

Preparation Time: 30 minutes
Cooking time: 30 minutes
Servings: 5

Ingredients:
  • 350 gm short grain rice (soaked for 1 hour)
  • 1/2 cup boiled corn
  • 250 gm carrots (chopped)
  • 250 gm leek (chopped)
  • 100 gm onions (sliced)
  • 2 green chilies (chopped)
  • 1/4 cup green onions (chopped)
  • pinch of white pepper powder
  • 2 cloves
  • 10 gm ginger (finely chopped)
  • 4 cups vegetable stock (optional)
  • 1 tsp clarified butter
  • 3 to 4 tsp refined oil
  • salt to taste

Instructions:

  1. Heat refined oil in a cooking pan on a medium flame.
  2. Add cloves and let them crackle for half a minute.
  3. Thereafter add sliced onions and saute till they turn light pink.
  4. Add green chilies with chopped ginger.
  5. Switch the flame to low and stir fry for about 1 minute.
  6. Add boiled corn with carrots, leek and green onion.
  7. Saute for two more minutes and season with white pepper powder and salt.
  8. Immediately add the vegetable stock with rice and once stir to mix everything.
  9. Cover the lid and simmer for 10 minutes.
  10. Add clarified butter and gently stir for 2 to 3 minutes.
  11. Switch off the flame and serve hot with your favorite vegetable stew.
