People generally prefer vegetarian tacos here in New Delhi, but stuffing of seafood and fish is also relished by foodies. Today's yummy tacos are loaded with cheesy fish-based stuffing. You can either take fresh water fish or the best one available in your area. Make sure you take the best boneless chunks to get the best results. Similarly, you can take your favorite variant of cheese provided it melts easily. Since the stuffing used in these tacos is rich in protein, you can use them as a complete meal instead of just munching as a snack. Vegetarians can replace fish with mushrooms or black beans. You can easily refrigerate these tacos for up to 24 hours. Let's make these scrumptious and creamy fish tacos.

Cheesy fish and corn tacos

Try these cheesy corn tacos stuffed with loads of corn and spinach salad which is further enhanced with select spices to make it a lip smacking snack.

Servings: 5

Ingredients:
  • 8 to 10 corn tacos
  • 500 boneless fish mince
  • 250 gm processed cheese
  • 1/2 cup boiled corn
  • small bunch of spinach (blanched)
  • 1 cup cabbage (grated)
  • 1/2 cup tomatoes (chopped)
  • 1 onion (finely chopped)
  • 1 tsp lime juice
  • 1/4 tsp paprika
  • 1 tsp dried herbs
  • 2 tsp ginger garlic paste (roasted)
  • 100 gm cottage cheese (mashed)
  • pinch of black pepper
  • parsley for garnishing
  • 5 to 6 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Heat 4 to 5 tsp olive oil in a shallow frying pan.
  2. Switch the flame to low and saute fish mince for about 4 to 5 minutes.
  3. Take a large bowl and add chopped onions, chopped tomatoes, sautéed fish mince, lime juice, paprika, dried herbs, roasted ginger garlic paste, 1 tsp olive oil and salt in it.
  4. Toss it well for about a minute so that all the ingredients are mixed well.
  5. Fill the topping in each corn taco and place a layer of chopped cabbage above the topping.
  6. Sprinkle generous amount of grated processed cheese on top of each taco.
  7. Finally, garnish each fish taco with chopped parsley.
  8. Mix boiled corn, blanched spinach, black pepper, mashed cottage cheese and salt in a bowl.
  9. Take a large serving plate and arrange fish tacos on one side.
  10. Place corn and spinach salad along with tacos and serve immediately.
