Today's salad is nutritious and is rich in fiber and protein. It's one of the best ways to give zucchini to your kids. This recipe tastes best when it is consumed fresh. That's why preparing it just before serving the meal is always preferable. You can also add some mint leaves along with parsley to enhance the flavor. Use nonstick pan to create oil free scrambled eggs. Make sure you remove extra moisture and water from grated zucchini else it may spoil the texture of the salad. You can also add some feta cheese in this salad. Leftovers of this salad can be blended and whipped with sour cream and can be topped on sandwiches. Use fresh boiled corn to get the best results. Nutritious scrambled eggs with corn salad

Enjoy this delicious and healthy scrambled eggs recipe which is enhanced with zucchini slices and boiled corn making it a fulfilling and a complete meal.

Ingredients:
  • 1 big zucchini (grated)
  • 1/2 cup corn (boiled)
  • 3 eggs
  • small bunch of parsley (finely chopped)
  • 1/4 tsp white pepper powder
  • 1/2 tsp dried herbs
  • 1/4 cup tomatoes (chopped)
  • few drops of sesame oil
  • few drops of apple vinegar
  • 1 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Take a nonstick pan and break all 3 eggs in it on a low flame.
  2. Season with salt and quickly stir to make scrambled eggs within a minute. Keep aside.
  3. Take a small bowl and add sesame oil, apple vinegar and extra virgin olive oil in it. Mix it well with a spoon and keep aside.
  4. Take a large salad bowl and add scrambled eggs, grated zucchini, boiled corn, chopped parsley and tomatoes in it.
  5. Gently mix with a wooden spatula.
  6. Season it with white pepper powder, dried herbs and salt.
  7. Add the dressing made in the 3rd step.
  8. Gently toss for half a minute and serve immediately.
