Don't be surprised if you don't find spaghetti in this recipe. Yes, we do have spaghetti, but entirely made from zucchini julienne. This unique salad is perfect for barbeque parties with other main course entries. I've used generous amount of fresh dried herbs in this salad to get the flavor and pungent aroma. To get the best results, use dried cherry tomatoes for the sauce. You can also include cucumber in this recipe to add more depth and taste. The leftovers of this salad can be included in a pasta sauce with real spaghetti. If you don't have an equipment to correctly peel long zucchini julienne, use grated zucchini. You must prepare and serve this tasty salad fresh. The refrigerated version gets too moist.

Unique spaghetti zucchini salad

Enjoy this unique salad recipe which includes zucchini in the form of spaghetti and topped with spicy and flavorful dried tomato sauce with an awesome flavor.

Servings: 6

Ingredients:
  • 4 to 5 big zucchinis
  • 200 gm dried cherry tomatoes
  • 1 tsp lime juice
  • 1 tsp whole coriander seeds
  • 1/2 tsp whole cumin seeds
  • 1/4 tsp paprika
  • 1 tsp onion paste
  • 1/2 tsp mint leaves paste
  • pinch of black pepper (coarsely ground)
  • 3 to 4 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Wash zucchinis well in cold water and slightly peel the outer shell.
  2. Make long spaghetti shaped julienne through a peeler or grater.
  3. Blend dried cherry tomatoes with half a cup of water.
  4. Take a bowl and pour tomato paste in it.
  5. Slightly roast both coriander and cumin seeds.
  6. Crush them into a coarse powder.
  7. Add 3/4th of this powder in the blended tomato paste.
  8. Add lime juice, paprika, onion paste, mint leaves paste, black pepper and salt.
  9. Mix all the ingredients in the tomato paste with a spatula.
  10. Heat olive oil in a shallow frying pan.
  11. Saute tomato paste for about 5 minutes on a low flame.
  12. Arrange zucchini julienne on the salad plate and sprinkle the remaining 1/4th powder on it.
  13. Place generous amount of seasoned tomato sauce on top.
  14. Serve immediately with your main course dish.
