I rarely add multiple veggies in a pasta preparation. Today's delicious pasta is packed with herbs as well as nutritious vegetables. It's a complete meal and is ideal for breakfast. I've used Gemelli pasta which can be easily replaced with a local pasta variant. French bean is an essential ingredient of this preparation and must be included to get the authentic taste. Cauliflower can be easily replaced by broccoli or you can take equal quantities of both to give a more colorful look to the recipe. Seasoned whipped cream can also be sprinkled on this pasta just before serving. Leftovers can be used for stuffing patties, tacos and burgers. Pasta with beans and cauliflower

Relish this scrumptious and light pasta preparation which includes beans and cauliflower seasoned with tasty spices making it a complete and wholesome meal.

Preparation Time: 30 minutes
Cooking time: 35 minutes
Servings: 4

Ingredients:
  • 250 gm Gemelli pasta
  • 250 gm cauliflower (chopped)
  • 1/2 cup French beans (soaked overnight & boiled)
  • 4 to 5 garlic cloves (mashed)
  • 1/2 cup red bell peppers (chopped)
  • 1/2 tsp dried herbs
  • 1/4 tsp white pepper powder
  • pinch of paprika
  • 50 gm unsalted cheese
  • fresh bunch of parsley (finely chopped)
  • 5 to 6 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Cook pasta in half a liter of boiling water for about 3 minutes.
  2. Drain extra water and sprinkle a tsp of olive oil on the boiled pasta.
  3. Toss it well and keep aside.
  4. Take a large wok and heat olive oil in it.
  5. Add mashed garlic and saute for about half a minute.
  6. Add boiled French beans and stir fry for 2 minutes.
  7. Add cauliflower and bell peppers.
  8. Season with dried herbs, white pepper powder, paprika and a pinch of salt.
  9. Saute for a minute and immediately add cheese and boiled pasta.
  10. Stir fry for about 3 to 4 minutes on a high flame.
  11. Add chopped parsley and switch off the flame.
  12. Serve hot with coffee or fruit juice.
