Eggplants can be cooked in different ways. You can include them in a curry or can bake and grill them. Today's recipe is a creamy and rich eggplant recipe that can be cooked fairly quickly. Instead of using a local cheese variant, use Parmesan to get the authentic taste. Same goes for herbs used this preparation. Instead of baking, you can also grill these eggplants in a shallow pan. I generally serve these eggplants with fried rice. Pick nice and big eggplants to get the best results. You can either cut thin slices or can dice them though the former approach is always preferable. One can also mix zucchini in this recipe to increase the number of servings. Let's make these moist and scrumptious eggplants.

Cheesy baked eggplants with herbs

Try these easy-to-make baked eggplant slices flavored with spices and herbs and covered with generous amount of Parmesan cheese for an irresistible flavor.

Preparation Time: 30 minutes
Cooking time: 8 minutes
Servings: 4

Ingredients:
  • 600 gm eggplants (evenly sliced)
  • 1 cup Parmesan cheese (grated)
  • 1/4 tsp black pepper (coarsely ground)
  • 1/4 tsp oregano powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin seeds powder (roasted)
  • 1/4 cup tomato puree
  • 1 tsp ginger paste
  • small bunch of parsley (chopped)
  • 5 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Wash eggplant slices and keep in a bowl of water.
  2. Take a bowl and pour tomato puree in it.
  3. Add black pepper, oregano powder, garlic powder, cumin seeds powder, ginger paste, 5 tsp olive oil and a pinch of salt in it.
  4. Mix everything with a spoon and add grated Parmesan cheese in it.
  5. Whip it with a large spoon for 2 to 3 minutes.
  6. Grease a small baking tray and arrange eggplant slices on it.
  7. Pour the seasoned puree and cheese on top.
  8. Sprinkle chopped parsley on the topping.
  9. Finish with generous amount of grated Parmesan cheese on it.
  10. Bake in a preheated oven at 300 degrees for about 6 minutes.
  11. Serve hot with fried rice or garlic bread.
