One of the best ways to get your kids eat zucchini is to use them in the topping of a pizza. That's what we've done today! I've also used generous amount of leek and garlic to give it a delicious flavor. Depending on your taste, you can make subtle changes in the sauce and spices used in this pizza. You must serve this pizza hot as the refrigerated version may get a moist or wet topping. You can also add thin potato wafers along with zucchini slices for more crunchy and irresistible topping. Use a slightly thick crust for this pizza to get the best results. You can also use wheat tortillas as the base for this topping. Do not forget to serve it with a hot and fiery sauce. Scrumptious zucchini pizza

Enjoy this nutritious and delicious pizza preparation made with a nice topping made from zucchini, leak and loads of garlic to induce a unique flavor.

Preparation Time: 20 minutes
Cooking time: 10 minutes
Servings: 6

Ingredients:
  • 1 large wheat pizza base
  • 2 large zucchini (thinly sliced)
  • 250 gm leek (finely chopped)
  • 6 to 8 garlic cloves (finely chopped)
  • 1 cup tomato sauce
  • 1/2 cup mozzarella (shredded)
  • pinch of paprika
  • pinch of black pepper (coarsely ground)
  • 1 tsp dried oregano powder
  • oodles of extra virgin olive oil
  • salt to taste

Instructions:

  1. Grease a large baking tray with olive oil and arrange the pizza base at the center.
  2. Sprinkle half of the mozzarella cheese on the base to make a thin layer.
  3. Pour and spread a layer of tomato sauce on top of it.
  4. Arrange a layer of chopped leek above it.
  5. Sprinkle chopped garlic generously over it.
  6. Arrange zucchini slices carefully on the topping.
  7. Season it with paprika, oregano powder, black pepper powder and a pinch of salt.
  8. Sprinkle the remaining mozzarella above the seasoning.
  9. Drizzle generous amount of extra virgin olive oil in the end.
  10. Bake in a preheated oven at 200 degrees for about 10 minutes.
  11. Serve immediately with your favorite sauce and beverage.
