Recently, I've started preferring vermicelli over noodles. Reason is simple. They cook much faster and are light on stomach. Although I've cooked chicken several times with noodles before, this one is quite different due to the presence of exotic spices and herbs. The overall texture of the preparation is more or less the same but the taste beats all of its predecessors. You can either use wheat or rice vermicelli for this recipe. One can also add some sliced sausages to further enhance the flavor and quantity. Since fresh eggs are used in this preparation, you must consume it in a day or two. Apart from basil, you can also give a hint of thyme and mint. Let's make this fulfilling and yummy recipe.

Wholesome chicken and vermicelli recipe

Enjoy this wholesome meal of rice and vermicelli cooked with chicken and eggs and spiced up with select herbs and spices which gives it a yummy flavor.

Preparation Time: 25 minutes
Cooking time: 30 minutes
Servings: 4

Ingredients:
  • 1/2 cup rice
  • 200 gm vermicelli
  • 250 gm boneless chicken
  • 2 eggs
  • 1 tsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp ginger garlic paste
  • few drops of malt vinegar
  • 1/4 tsp paprika
  • 2 small tomatoes (sliced)
  • 1/2 tsp dried herbs
  • small bunch of basil (chopped)
  • 4 to 5 tsp olive oil
  • salt to taste

Instructions:

  1. Cut chicken into one inch small pieces.
  2. Soak rice in water for one hour.
  3. Boil vermicelli in water for about 3 minutes. Drain extra water and keep aside.
  4. Heat olive oil in a large wok.
  5. Add ginger garlic paste and saute for about 2 minutes.
  6. Add tomatoes with a pinch of salt and stir fry for 2 to 3 minutes.
  7. Add chicken pieces and eggs with dried herbs.
  8. Lower the flame and saute for about 3 minutes.
  9. Add rice with paprika, salt and 250 ml of water.
  10. Simmer on a low flame till the water is reduced.
  11. Add soy sauce, oyster sauce and malt vinegar.
  12. Stir fry seasoned rice and chicken for about 2 minutes on a high flame.
  13. Finally add boiled vermicelli and chopped basil.
  14. Saute for 2 minutes and bring down from the flame.
  15. Serve hot with coffee or apple juice.
