That's what I've done today by preparing this yummy and moist taco salad that can also be taken as a starter. This cheesy salad should be prepared fresh and must be served after refrigerating for about half an hour. You can use both corn and wheat tacos for this salad although the corn version is more delicious. To add more color to this salad, use slightly roasted broccoli. It's also an ideal recipe for kids' lunch box. One can also grill these tacos for a different version of the same recipe. Let's make this crunchy, moist, spicy and delicious taco salad that's easy-to-make.

Wholesome mushroom and taco salad

Enjoy this yummy, crisp and cheesy salad preparation made from fresh corn tacos along with flavored mushrooms cooked to perfection with cream and cheese.

Preparation Time: 25 minutes
Cooking time: 5 minutes
Servings: 6

Ingredients:
  • 8 to 10 corn tacos (slightly crushed)
  • 300 gm mushrooms (grated)
  • 1/4 cup whipped cream
  • 250 gm classic processed cheese (grated)
  • 200 gm ripe tomatoes (sliced)
  • 1 tsp honey
  • 1/2 tsp soy sauce
  • 1/2 tsp ginger paste
  • pinch of clove powder
  • pinch of paprika
  • 4 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Heat 4 tsp olive oil in a shallow frying pan.
  2. Add ginger paste and saute for about 2 minutes.
  3. Add grated mushrooms with honey.
  4. Switch the flame to low and stir fry for about 2 minutes.
  5. Season it with soy sauce, clove powder, paprika and a pinch of salt.
  6. Saute for 5 more minutes and bring down from the flame.
  7. Take a large and flat serving plate.
  8. Arrange slightly crushed tacos at the bottom of the plate.
  9. Place of layer of sweet and sour mushrooms over it.
  10. Add grated cheese and chopped tomatoes and season with paprika.
  11. Sprinkle whipped cream on top and serve immediately.
