Sometimes I wonder what big difference would have introduced in our eating habits if potatoes never existed! It is such a versatile vegetable that the entire human race eats it in countless ways. Today, there's another variant of roasted potatoes that can be served along with the main course recipe. An ideal roasted potato recipe almost always includes a combination of herbs and a dressing agent. Today's recipe includes fresh basil and diluted balsamic vinegar to give a unique taste to the entire preparation. As always, you can experiment with the herbs and dressing as per your taste. You can also add sweet potatoes for an enhanced flavor. Let's make these aromatic and tasty roasted potatoes.

Prepare these easy-to-make roasted potatoes preparation with an amazing flavor of fresh lime, vinegar and basil which is ideal for your brunch or dinner.

Preparation Time: 20 minutes
Cooking time: 6 minutes
Servings: 4

Ingredients:
  • 500 gm potatoes (peeled and diced)
  • 100 gm fresh basil (finely chopped)
  • 1 tsp balsamic vinegar
  • few drops of sesame oil
  • pinch of white pepper powder
  • 2 tsp lime juice
  • 1/4 cup extra virgin olive oil
  • salt to taste

Instructions:

  1. Wash all the potatoes and let the moisture dry from the diced pieces.
  2. Take a large bowl and add diced potatoes in it.
  3. Add chopped basil, balsamic vinegar, sesame oil, white pepper powder, lime juice, salt and generous amount of extra virgin olive oil.
  4. Mix well with a spoon and let the potatoes in the marinade for about 5 minutes.
  5. Place all the diced potatoes in a slightly greased baking tray.
  6. Roast in a preheated oven at 300 degrees for about 6 minutes.
  7. Serve hot with butter and cheesy toasts.
