Aromatic and spicy whole baby potatoes

Try these easy-to-make baby potatoes which are cooked in whole form and are glazed with fiery and tangy tomato and onion sauce giving it an awesome flavor.

Servings: 6

Ingredients:
  • 750 gm baby potatoes
  • 200 gm red onions
  • 200 gm cherry tomatoes
  • 1/4 tsp red chili flakes
  • pinch of black pepper powder
  • 2 tsp ginger garlic paste
  • 1 tsp fresh cream
  • 2 tsp coriander seeds powder
  • 1 tsp turmeric powder
  • cilantro for garnishing
  • 3 to 4 tsp mustard oil
  • salt to taste

Instructions:

  1. Peel and wash all the baby potatoes.
  2. Pierce them with a fork and keep aside.
  3. Blend onions into a smooth paste and keep aside.
  4. Blanch all the tomatoes and blend them into a fine puree.
  5. Take a large bowl and add pierced baby potatoes in it.
  6. Pour onion and tomato paste on it and mix well with a wooden spatula.
  7. Cover with aluminum foil and refrigerate for at least 15 minutes.
  8. Heat mustard oil in a deep pan and add ginger garlic paste in it.
  9. Saute for about 2 minutes and add coriander seeds powder, chili flakes, turmeric powder, black pepper powder and cream.
  10. Stir fry for 3 minutes and add marinated baby potatoes.
  11. Pour all the leftover onion and tomato paste in the pan.
  12. Add salt and stir fry for about 5 minutes.
  13. Add one cup of water and cover the lid.
  14. Simmer for about 7 to 8 minutes or till the water dry up.
  15. Garnish with chopped cilantro and serve hot.
