Today's scrumptious salad is one of my favorites and I always make it whenever we're hosting a small gathering at our home. Believe it or not, this versatile salad can be consumed both as an appetizer and as a regular meal. Quinoa is a nutritious cereal that is one of the primary ingredients of this delicious salad. If you cannot find it in your local grocery shop, you can use oats or couscous as a substitute. Salads and soups almost always have ample scope for experimentation. Addition of bell peppers and cucumber can give more color and flavor to this salad. Make sure you use the best quality extra virgin olive oil for this salad's dressing. Let's quickly make this light, nourishing and crunchy salad.

Crunchy quinoa and carrot salad

Quickly make this crunchy and delicious salad preparation made from quinoa base which is pepped up with shredded carrot and loads of lettuce and parsley.

Preparation Time: 20 minutes
Cooking time: 6 minutes
Servings: 4

Ingredients:
  • 1 cup quinoa
  • 200 gm carrots
  • bunch of lettuce
  • small bunch of parsley
  • 1 lime juice
  • 5 to 6 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Soak quinoa overnight in lukewarm water.
  2. In the morning, cook it in a pressure cooker for about 6 minutes in half liter of water. Keep aside.
  3. Finely grate carrots and remove extra moisture from it.
  4. Finely chop both lettuce and parsley.
  5. Take a large salad bowl and add quinoa in it.
  6. Add carrots, lettuce and parsley and toss all the ingredients.
  7. Pour olive oil and lime juice on top of it and mix well with spatula.
  8. Season with salt and serve immediately.
