I and my family members always prefer to add multiple ingredients in our scrambled eggs. Today's recipe not only includes several nutritious ingredients but also a rich creamy base for the scrambled eggs. Just before serving, a sprinkle of red chili flakes makes it almost irresistible. You don't need toasted bread with these scrambled eggs as the deadly combination of mushrooms and creamy base makes it quite fulfilling and delicious. Addition of colorful bells peppers can make this recipe visually appealing. Black olives go best with this preparation, although green olives can be used as a substitute as well. To make it more scrumptious, you can also sprinkle some grated processed cheese right before serving.

Nutritious scrambled eggs with mushrooms

Make these creamy scrambled eggs cooked with delicious black olives and loads of fresh mushrooms which give it a unique texture and an irresistible flavor.

Preparation Time: 20 minutes
Cooking time: 10 minutes
Servings: 4

Ingredients:
  • 4 to 6 eggs
  • 1/2 cup button mushrooms (slightly roasted)
  • 1/4 cup black olives (chopped in halves)
  • 4 tsp sour cream
  • 1/4 cup Parmesan cheese
  • pinch of white pepper powder
  • 1/4 tsp red chili flakes
  • 1 green chili paste
  • cilantro for garnishing
  • 2 tsp vegetable oil
  • salt to taste

Instructions:

  1. Break all eggs in a bowl and add white pepper powder and salt in it.
  2. Beat them for about two minutes and keep aside.
  3. Take a separate bowl and add sour cream in it.
  4. Melt Parmesan cheese in a pan and mix with sour cream.
  5. Whip it briskly to form a smooth paste and keep aside.
  6. Heat 2 tsp vegetable oil in a wok.
  7. Add green chili paste and saute for about half a minute.
  8. Add black olives and mushrooms.
  9. Season with pinch of salt and toss for about 2 minutes.
  10. Add beaten eggs and mix all the ingredients briskly with a spatula.
  11. Add creamy base and stir fry for 2 more minutes.
  12. Sprinkle red chili flakes on top and switch off the flame.
  13. Garnish with chopped cilantro and serve hot with toasted bread.
