Do I need to say that this recipe is a complete meal with loads of nutrients? I've used king trumpet mushrooms with fresh shrimps to get the best flavor and color. If ramen noodles are not available, you can easily use general whole wheat noodles. Various kinds of sauces can be tried with this recipe to transform it into a local delicacy. Similarly, you can easily add or subtract the veggies included in this preparation. A slightly different variant of this recipe also exist which includes a creamy coconut curry base. Since mushrooms are quite moist, you must ensure that you consume this recipe on the very same day. Vegetarians can use cottage cheese and bell peppers to get a colorful version of this recipe.

Ramen noodles with chicken and shrimps

Enjoy this fulfilling platter of Ramen noodles cooked with boneless tender chicken, fresh mushrooms and delicious shrimps to fulfill your hungry tummy.

Ingredients:
  • 250 gm ramen noodles
  • 200 gm boneless chicken (2" pieces)
  • 200 gm fresh shrimps (deveined)
  • 200 gm king trumpet mushrooms (chopped)
  • 1 green chili (finely chopped)
  • 1/4 cup cabbage (finely chopped)
  • 1 carrot (chopped into julienne)
  • 1/4 tsp soy sauce
  • 1 tsp Thai curry paste
  • 2 garlic cloves paste
  • few drops of malt vinegar (optional)
  • pinch of white pepper powder
  • 1/2 tsp ginger paste
  • pinch of sugar
  • 3 tsp cooking oil
  • salt to taste

Instructions:

  1. Boil ramen noodles in half a liter of water for about 5 minutes.
  2. Drain all the water and keep the noodles aside.
  3. Heat 3 tsp cooking oil in a large wok.
  4. Reduce the flame to medium and add garlic and ginger paste in it.
  5. Saute till they turn light pink.
  6. Add Thai curry paste with 2 tsp of water.
  7. Stir for 3 minutes and add chicken and shrimp pieces.
  8. Bring the flame to high and toss both of them for about half a minute.
  9. Add soy sauce, malt vinegar, white pepper powder, sugar and salt.
  10. Immediately add mushrooms and stir fry for 2 more minutes.
  11. Add noodles, green chili, chopped cabbage and carrots.
  12. Bring down the flame to low and toss for about one more minute.
  13. Serve hot with your favorite beverage.
