Crisp and delicious wheat crackles

Try this unique crisp and delicious crackle preparation made from whole wheat and chickpea flour which is flavored with mint and spices for irresistible flavor.

Preparation Time: 30 minutes
Cooking time: 15 minutes
Servings: 10

Ingredients:
  • 500 gm wheat flour
  • 250 gm raw chickpea flour
  • pinch of baking soda
  • 2 tsp dried mint flakes
  • 1 tsp black pepper (coarsely ground)
  • pinch of yeast
  • 2 egg yolks
  • 50 gm unsalted butter
  • 2 to 3 tsp olive oil
  • salt to taste

Instructions:

  1. Take a large flat plate and put wheat and chickpea flour in it.
  2. Add baking soda, yeast, egg yolks, melted unsalted butter, olive oil and salt in it.
  3. Sift for about 3 to 4 minutes and make soft dough by adding lukewarm water.
  4. Cover with muslin cloth and place in a cool dark place for a night.
  5. Next morning, take a large baking tray and grease it well with oil or butter.
  6. Take dough patties and roll them into a flat quarter inch thick base.
  7. Cut them into your desired shape.
  8. Sprinkle mint flakes and black pepper from top and lightly tap with hands.
  9. Place all the seasoned crackles in the greased tray.
  10. Bake in a preheated oven at 200 degrees for about 12 to 15 minutes.
  11. Place in an airtight container and serve with tea or coffee.
