My family always prefers pizzas loaded with veggies. Today's pizza is a unique and spicy combination of hot sauces, veggies and crisp tortilla crust. Since this pizza is hot on tongue, you can serve its small pieces as a snack. You can experiment with the list of veggies used in this pizza. If tortillas are not available in your locality, you can use the regular pizza base. You can also add a layer of parboiled potatoes to the topping to give it a unique texture. One can also add some seasoned shredded chicken to this pizza for a rich flavor. The crust of this spicy pizza is extremely crunchy and helps in enhancing the overall flavor of the topping. If possible, use the wood-based oven to get the best results.

Try this unique pizza with a base made with fresh corn tortillas and topped with mushrooms and sprouts drenched in flavorful and spicy pasta sauce base.

Cooking time: 20 minutes
Servings: 6

Ingredients:
  • 15-20 corn tortillas
  • 2 cups tomato puree
  • 1/2 cup Parmesan cheese
  • 1 big red onion (sliced)
  • 2 tsp red chili paste
  • 1/2 cup mushrooms (chopped)
  • 1/4 cup green olives (finely chopped)
  • 1/4 tsp black pepper (coarsely ground)
  • 1/4 cup bean sprouts
  • 1/4 tsp garlic powder
  • 1/2 tsp dried herbs (coarsely ground)
  • 1 green chili (finely chopped)
  • 5 to 6 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Take a deep nonstick pan.
  2. Add tomato puree, Parmesan cheese, red chili paste, garlic powder, 2 tsp olive oil and pinch of salt in it.
  3. Simmer on a low flame and stir continuously.
  4. After 10 minutes, switch off the flame and keep aside.
  5. Take a flat pizza baking tray and arrange tortillas on it overlapping each other.
  6. You must ensure that tortillas cover the edges of the tray as well.
  7. Pour spicy tomato sauce on the base and sprinkle chopped mushrooms on it.
  8. Add shredded green olives and bean sprouts as well.
  9. Pour another layer of spicy tomato sauce on top of the veggies.
  10. Arrange red onion rings on top and sprinkle black pepper powder and chopped green chilies on top.
  11. Add 2 to 3 tsp of olive oil on top and sprinkle dried herbs on it.
  12. Bake in a preheated oven at 200 degrees for about 6 minutes.
  13. Serve hot with your favorite beverage.
