I can experiment with chicken recipes throughout the year and still it will be less. Today's exotic chicken breast is coated with garlic, turmeric, thyme and other dried herbs. Do not try to substitute thyme with some other herb else you may not get the original flavor. I've used both fresh and dried thyme for this recipe. The fresh one goes in the marinade base and the other one is sprinkled on top to get the right aroma. The leftovers of this chicken can be included in toasted sandwiches or soups. I've used lemon and asparagus for garnish which can be further enriched with bell peppers and iceberg lettuce. Use fresh groundnut or sunflower oil for grilling to get a unique aroma that gels so well with this marinade.

Herbs infused chicken breasts with asparagus

Relish these herbs infused chicken breasts preparation which are cooked to perfection which gives it a unique aroma and exotic flavor which is beyond words.

Preparation Time: 35 minutes
Cooking time: 15 minutes
Servings: 4

Ingredients:
  • 3 to 4 large chicken breasts
  • 50 gm dried thyme
  • small bunch of fresh thyme leaves
  • 1/2 tsp turmeric powder
  • 8 to 10 garlic cloves (mashed)
  • 1/4 tsp dried herbs
  • 1/4 tsp black pepper (coarsely ground)
  • 2 tsp coriander seeds powder
  • 1 green chili paste
  • 1 lime slice (for garnishing)
  • 250 gm asparagus
  • 5 to 6 tsp groundnut oil
  • salt to taste

Instructions:

  1. Wash chicken breasts with lukewarm water and keep aside.
  2. Take fresh thyme leaves, garlic cloves and a pinch of salt in a blender.
  3. Add 2 tbsp water in it and make a smooth paste.
  4. Take out this paste in a small bowl and add turmeric powder, dried herbs, black pepper, coriander seeds powder, green chili paste and salt in it.
  5. Whip the paste well with a spoon and keep aside.
  6. Apply the pungent paste on chicken breast and leave it for at least an 10 minutes.
  7. Take 2 tsp cooking oil in a shallow pan and add asparagus in it.
  8. Add pinch of salt and stir fry for 3 more minutes. Keep aside
  9. Meanwhile, take the dried thyme and slightly rub and crush with hands.
  10. Take a shallow non-stick pan and heat groundnut oil in it.
  11. Place marinated chicken breast and saute from all sides on a very low flame for about 8 to 10 minutes.
  12. Sprinkle dried thyme on top and garnish with lime.
  13. Take a serving plate and arrange sautéed asparagus at the bottom.
  14. Place garnished chicken breast on top of it and serve hot.
