Today's recipe includes noodles, rice, veggies, beef and vermicelli that make it a wholesome meal. If you don't like beef, you can replace it with chicken or shrimps. You can also bake these rice making separate layers of vermicelli and noodles. Do not hesitate to add local green herbs and flavoring agents to give it a unique taste. I generally make it for dinner and serve with a spicy chicken stew. Vegetarians can completely omit beef and can add some more colorful veggies to this recipe. Bean sprout is one of the essential ingredients of this recipe. In fact, you can diversify the type of beans used for sprouts to make the dish more nutritious. Use short and thick rice to get the best texture for this delicious fried rice.

Spicy fried rice with wheat noodles

Enjoy this unique combination of vermicelli, wheat noodles and fried rice which is flavored with pungent spices and loads of herbs making it a yummy recipe.

Ingredients:
  • 2 cups short grain rice
  • 250 gm ground beef (fat free)
  • 100 gm vermicelli
  • 100 gm normal wheat noodles
  • 1 cup bean sprouts
  • 2 green onion leaves (chopped)
  • 1 tsp Thai curry paste
  • 1 tsp ginger paste
  • 1 red onion paste
  • 1/4 tsp white pepper powder
  • 1 tomato (chopped)
  • 1/4 tsp soy sauce
  • 1 tsp fresh mint leaves paste
  • cilantro for garnishing
  • 4 tsp olive oil
  • salt to taste

Instructions:

  1. Wash rice 2 to 3 times under running water and keep aside.
  2. Boil 2 liters of water in a deep pan and add vermicelli and noodles in it.
  3. Stir for about 3 minutes and switch off the flame.
  4. Drain all the water and keep aside.
  5. Take a large wok and add 4 tsp olive oil in it.
  6. Add onion paste and saute till it turns light pink.
  7. Add tomatoes, ginger and Thai curry paste and stir fry for two minutes on a high flame.
  8. Add bean sprouts, ground beef and rice and pour 5 cups of water in it.
  9. Simmer for about 15 minutes.
  10. Add mint leaves paste and gently stir fry till water is reduced completely.
  11. Add vermicelli and noodles with white pepper powder, soy sauce and salt.
  12. Stir fry briskly for about 3 to 4 minutes on a high flame.
  13. Take out in a serving plate and garnish with green onion leaves and cilantro.
  14. Serve hot with a spicy vegetable or meat stew.
