There are several variants of chickpea crepes made in different parts of the world. Generally, they're eaten without any stuffing but today's recipe includes a delicious stuffing as well. The soybean tofu used in this recipe is readily available in super markets and if it not available in your area, you can use plain cottage cheese or fresh goat cheese. You can also add some eggs to the crepes batter to prepare a quick and fulfilling breakfast for your hungry kids. You can also prepare sweet crepes in a similar fashion and can stuff caramel glazed sweet potatoes in it. In short, it's all about innovation and creativity. Since cooked tofu cannot be kept for long duration, you must consume it on the same day.

Delicious chickpea crepe starter with tofu stuffing

Make this perfect preparation for breakfast made from chickpea flour and flavorful soybean tofu which is not only healthy but can be cooked in quick time.

Preparation Time: 20 minutes
Cooking time: 30 minutes
Servings: 6

Ingredients:
  • 400 gm chickpea flour
  • 350 gm soybean tofu (crumbled with hands)
  • 1/4 tsp paprika
  • pinch of white pepper powder
  • 2 eggs
  • 2 to 3 garlic cloves (crushed)
  • 1 tsp ginger garlic paste
  • 1/4 tsp malt vinegar
  • pinch of powdered dried thyme
  • vegetable oil for shallow frying
  • salt to taste

Instructions:

  1. Take a large bowl and add chickpea flour in it.
  2. Add paprika, beaten eggs, ginger garlic paste and salt in it.
  3. Add half cup of water and beat to form a smooth batter. Add extra water, if required.
  4. Heat a wok and add 4 tsp oil in it.
  5. Add mashed garlic and saute for about a minute.
  6. Add shredded tofu and stir fry for 2 more minutes on a medium flame.
  7. Add white pepper powder, malt vinegar, powdered dried thyme and salt.
  8. Saute for 3 more minutes and bring down from the flame.
  9. Take a flat griddle and grease it with oil.
  10. Pour a large spoonful of batter on it and make a flat crepe through a spoon.
  11. Fry from both sides for about 3 minutes each and add seasoned tofu in the center.
  12. Roll with a spoon and directly place in the serving plate.
  13. Serve hot with tangy dip or a spicy sauce.
