Who doesn't love crispy patties seasoned with delicate herbs. Today's patties can either be consumed as a simple snack or can be used within a regular burger. We've used white beans and potatoes as the base for these patties. The crunchiness of the outer shell is obtained through oats. I've also added little bit of carrot to add color and some moistness. Since you're already adding carrots, make sure mashed potatoes and beans are completely moisture-free else the base will not be firm enough to hold the patty. Once patties are done, do not forget to serve them with a spicy coriander sauce to get the well deserved praise from your family and friends. Let's quickly make this crunchy and delicious snack.

Nutritious potato patties with oats and carrots

Make these extremely delicious potato patties recipe made with fiber packed oats and carrots which makes them an ideal candidate for making good breakfast.

Servings: 10

Ingredients:
  • 500 gm potatoes
  • 300 gm white beans (soaked overnight)
  • 2 cups oats
  • 1/2 cup carrots (finely grated)
  • 3 to 4 green chilies paste
  • 1/4 tsp red chili powder
  • 1/4 tsp cumin seeds powder (roasted)
  • pinch of white pepper powder
  • 2 tsp onion paste
  • 6 tsp semolina
  • pinch of green cardamom powder
  • vegetable oil for shallow frying
  • salt to taste

Instructions:

  1. Boil potatoes in a pressure cooker for about 12 minutes.
  2. Peel them and mash with a wooden spatula.
  3. Similarly, boil beans in a pressure cooker for about 25 minutes.
  4. Drain all the water and mash them in a blender.
  5. Take a large glass bowl and add mashed potatoes and beans in it.
  6. Mix well with hands till both are blended together completely.
  7. Take grated carrot in a muslin cloth and place a heavy object on it to remove excess water.
  8. Add it to the potato and beans mash and mix well again.
  9. Add green chili paste, red chili powder, cumin seeds powder, white pepper powder, onion paste, green cardamom powder and salt.
  10. Mix it well for about 3 to 4 minutes with a spatula.
  11. Heat oil in a shallow frying pan.
  12. Add semolina in the patties mash and quickly mix for about a minute.
  13. Make flat patties with hands and roll both sides on the oats.
  14. Fry from both sides on a low flame till they turn light brown.
  15. Serve hot with a spicy and tangy sauce.
