Although I always try to make chicken breast with added items in a platter, this time it's a standalone recipe that will liven up your taste buds. Fresh basil is one of the primary ingredients of this recipe. Good quality extra virgin olive oil is also required to get the best results. Similarly, sun dried red chilies can add original flavor to this delicious chicken preparation. Make mildly flavored rice with this recipe and serve with a quality red wine to complete the main course. You can repeat the same process for duck and turkey as well provided you add some more seasoning. If leftovers are refrigerated, microwave them before serving, the very next day. Tender chicken breast with basil sauce

Enjoy these tender and flavor packed chicken breasts which are drenched in spicy and aromatic basil sauce base made with select spices for a unique taste.

Preparation Time: 30 minutes
Cooking time: 10 minutes
Servings: 5

Ingredients:
  • 800 gm chicken breast
  • bunch of fresh basil leaves
  • 4 to 6 sun dried red chilies
  • 1/4 tsp dried mint leaves powder
  • 1/4 tsp white pepper powder
  • 1/4 tsp oregano
  • 2 or 3 cloves powder
  • 1/4 tsp garlic powder
  • few drops of sesame oil
  • oodles of extra virgin olive oil
  • salt to taste

Instructions:

  1. Pierce all chicken breasts with a fork or needle.
  2. Wash basil leaves and add them in a blender with 1/4 cup of olive oil and garlic powder.
  3. Make a coarsely grounded paste and keep aside.
  4. Take a large bowl and add chicken pieces in it.
  5. Pour the raw basil sauce and apply it thoroughly with hands.
  6. Crush the red chilies and add to the marinated chicken.
  7. Add dried mint leaves powder, white pepper powder, oregano, cloves powder, sesame oil and salt as well.
  8. Mix all the ingredients well with a spatula.
  9. Cover the bowl with aluminum foil and refrigerate for 15 minutes.
  10. Grease a baking tray with olive oil and place all the marinated chicken pieces on it.
  11. Preheat an oven at 250 degrees and grill the chicken pieces for about 8 minutes.
  12. Serve hot with fried rice.
