Fruity and nutty cakes are popular in almost corner of the globe. Today's cake includes generous amount of banana and crunchy walnuts to make an irresistible dessert preparation. You can keep this cake refrigerated for at least a week provided it is baked well removing extra moisture. Although walnut is the prominent dry fruit used in this cake, you can add more as well. While taking bananas for this cake, make sure that they're neither too raw and nor too ripe. The proportion of bananas also matter so that they do not overwhelm the taste of other important ingredients. If you prefer to quickly experiment with this recipe, add some ripe peaches reducing the amount of bananas used in this cake.

Soft and nutty walnut banana cake piece

Make this nutritious and tasty cake recipe which has a nutty walnut flavor and a tempting addition of banana base which gives it a unique flavor and aroma.

Ingredients:
  • 8 bananas (nice and big)
  • 2 cups walnuts (chopped or crushed)
  • 3 cups refined wheat flour
  • 1/4 cup brown sugar
  • 2 cups powdered sugar
  • 4 egg yolks
  • 1 cup fresh cream
  • pinch of baking powder
  • 1/4 tsp cinnamon powder
  • 3 tsp cocoa powder
  • 2 tsp unsalted butter
  • few drops of banana essence (optional)

Instructions:

  1. Add egg yolks, cream and brown sugar in a blender.
  2. Blend it briskly for about 3 to 4 minutes. Keep aside.
  3. Peel all the bananas and cut them into small pieces.
  4. Blend them into a puree in an electric mixer. Keep aside.
  5. Take flour in a large bowl and add baking powder in it.
  6. Sift it with powdered sugar, cocoa powder and cinnamon powder.
  7. Add egg yolk and cream mixture with unsalted butter and sift again.
  8. Add pureed banana and mix it well with hands.
  9. Keep the consistency of the dough bit loose and if required, add some lukewarm milk.
  10. Once the cake dough is done, add banana essence and crunchy walnuts.
  11. Grease a baking tray and transfer the dough.
  12. Let it set firmly in the tray by slowly pressing with the spoon.
  13. Bake in a preheated oven for about 18-20 minutes at 250 degrees.
  14. Cut even pieces in your favorite shape and serve with a fruity ice cream.
