I always prefer to use fruits in salads to make them more rich, delicious and colorful. The following salad includes juicy plums in roasted form combined with seasoned pasta. You can also add pears and apples in this recipe to enrich it with more nutrients. I've also used different green herbs in this salad for added flavor which can be further enhanced by including mint leaves. This salad should be consumed on the same day due to the moist nature of roasted plums. I've used Penne pasta but you can replace it with your preferred variety. The good thing about this salad is that it can be taken as a main course meal too in the breakfast. So, let's make this fruity salad filled with aromatic herbs and cheese.

Flavorful plum and pasta salad platter

This pasta salad can be easily prepared in a few easy steps and is extremely nutritious full of fiber and vitamins coming from inclusion of fresh fruit slices.

Servings: 5

Ingredients:
  • 1 cup Penne pasta
  • 1 cup plums (chopped)
  • 1/4 cup blue cheese (finely grated)
  • 1/4 cup chives + basil + parsley (finely chopped)
  • 1/4 tsp black pepper powder (coarsely ground)
  • 1/2 tsp honey
  • pinch of cinnamon powder
  • 2 to 3 garlic cloves (finely minced)
  • pinch of dried onion powder
  • 5 to 6 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Wash pasta and boil for about 3 to 4 minutes on a medium flame.
  2. Drain all the water and keep aside.
  3. Grease a baking tray with olive oil and place chopped plum pieces on it.
  4. Sprinkle cinnamon powder on them and pour little honey on each one of them.
  5. Roast in a preheated oven for about 3 minutes at 180 degrees.
  6. Heat 4 tsp olive oil in a large wok.
  7. Add minced garlic and onion powder.
  8. Saute for about a minute and add pasta.
  9. Stir fry for about 2 more minutes on a high flame.
  10. Add grated blue cheese, chopped chives, parsley and basil, pinch of salt and black pepper powder.
  11. Switch off the flame and toss it well for about half a minute.
  12. Add roasted plums to this pasta and serve hot with your favorite fruit juice.
