This is a lemony pasta with generous amount of peppers and fresh shrimps. I've used good old Parmesan cheese, fettuccine pasta and red shrimps for making this delicious recipe. You can change the pasta and cheese as per your preference. I've also added small amount of eggplants and zucchini to make it bit colorful. Lemon is the real twist in this pasta as it adds a completely unique flavor to this preparation. Since this pasta contains veggies, seafood and fiber, it is a complete meal that's fulfilling and nourishing. If shrimps are not available in your locality, you can replace them with chicken chunks or any sea fish. Vegetarians can use button mushrooms or spicy tofu omitting the shrimps altogether.

Cheesy and tangy pasta with spicy shrimps

This wholesome and tasty pasta preparation consists of seasoned shrimps with delicious zucchini and broccoli pieces which makes it a complete meal platter.

Preparation Time: 20 minutes
Cooking time: 30 minutes
Servings: 5

Ingredients:
  • 300 gm fettuccine pasta
  • 250 gm red shrimps
  • 1/4 cup zucchini (chopped)
  • 1/4 cup broccoli (chopped)
  • 200 gm Parmesan cheese
  • 1/4 tsp white pepper powder
  • 1/2 tsp dried herbs
  • 1 tsp onion paste
  • 2 tsp lime juice
  • 2 green chilies (finely chopped)
  • 6 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Heat 2 tsp olive oil in a shallow frying pan.
  2. Add chopped zucchini and broccoli in it.
  3. Saute for about 2 minutes and keep aside.
  4. Boil 1 liter of water and add pasta to it.
  5. Stir for about 2 minutes and switch off the flame.
  6. Drain all the water and keep the pasta aside.
  7. Heat 2 tsp olive oil in a separate pan and add onion paste in it.
  8. Saute for about 2 minutes and add green chilies and shrimps to it.
  9. Stir fry for 3 minutes on a high flame.
  10. Add salt and white pepper powder.
  11. Mix well and add quarter cup of water.
  12. Simmer on a low flame for about 5 minutes.
  13. Take a large wok and add 4 tsp olive oil in it.
  14. Add boiled pasta, sautéed vegetables and seasoned shrimps in it.
  15. Stir fry on a high flame for about 2 minutes.
  16. Add 3/4th of Parmesan cheese in it in the shredded form with dried herbs.
  17. Add lime juice, toss well and cook for about 2 more minutes.
  18. Take out in a serving plate and sprinkle remaining shredded Parmesan cheese on top.
  19. Serve hot with a chilled glass of mix fruit juice.
