Roasted ducks are very popular in some parts of the globe and it's one of the primary ingredients of today's salad. This healthy salad also contains the goodness of peanuts and raw sesame seeds. This unique salad is a complete meal that includes veggies as well. If duck is not available in your area, you can use roasted shredded chicken. Some people don't like vinegar in a salad dressing. You can omit it completely for this recipe to replace it with your own local substitute. The leftovers of this salad can be easily stuffed in patties for making a delicious snack for breakfast or tea time. I generally add this salad in my tomato or vegetable soup bowl which makes it thick, moist, colorful and crunchy at the same time.

Scrumptious shredded duck meat and cabbage salad bowl

Make this unique, delicious and nutritious salad which consists of delicately roasted shredded duck meat with cabbage and peanuts which gives it good flavor.

Servings: 5

Ingredients:
  • 300 gm boneless duck meat
  • 200 gm Chinese cabbage (finely chopped)
  • 1 tsp honey
  • 1/2 tsp dark soy sauce
  • 1/4 tsp fish sauce
  • 1/4 tsp chili sauce
  • 1/4 tsp malt vinegar
  • 1/2 cup peanuts (slightly roasted)
  • 1 tsp sesame seeds (slightly roasted)
  • 1/4 tsp red chili flakes
  • pinch of sugar
  • small bunch of cilantro (chopped)
  • 4 to 5 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Cut duck meat into small pieces and keep aside.
  2. Take honey, soy sauce, fish sauce, chili sauce, malt vinegar and 1 tsp olive oil in a small bowl.
  3. Mix it with a spoon till everything is blended well.
  4. Take a large bowl and put duck pieces in it.
  5. Pour the spicy marinade over the duck pieces and apply it well with the spoon.
  6. Refrigerate it for at least 15 minutes.
  7. Heat 4 tsp olive oil in a shallow frying pan.
  8. Add marinated duck pieces in it and roast on a medium flame for about 8 to 10 minutes.
  9. Take a large salad bowl and add roasted duck pieces in it.
  10. Add shredded cabbage and mix well with a wooden spatula.
  11. Add peanuts, sesame seeds and toss well.
  12. Add salt, sugar and red chili flakes with 1 tsp of extra virgin olive oil.
  13. Mix well and garnish with chopped cilantro.
  14. Serve with your favorite main course meal.
