Tomato soups are made with different consistencies. The following soup is light and is very appetizing. I always prefer to include different kinds of cheese with soups as they compliment it quite well. Some tomato soups tastes best when served chilled, but this one can only be enjoyed when it's piping hot. Even if you decide to refrigerate it, do not forget to simmer it before serving. Since it is very light, you can take it in generous amount. I've taken regular processed cheese for the grilled toast but you can try out your favorite flavor. I generally make this light soup before dinner at weekends. You can also add some radish pulp with this soup to get a unique flavor. Let's make this savory tomato soup.

Mellow flavored clear tomato soup bowl

Make this absolutely light and mellow flavored tomato soup recipe which is served with grilled cheese toast making it perfect entry for morning breakfast.

Preparation Time: 20 minutes
Cooking time: 25 minutes
Servings: 5

Ingredients:
  • 900 gm fresh red tomatoes
  • 1/2 cup processed cheese (shredded)
  • 4 to 6 white bread slices
  • 2 garlic cloves (mashed)
  • pinch of black pepper (coarsely ground)
  • chopped basil (for garnishing)
  • 2 tsp olive oil
  • salt to taste

Instructions:

  1. Wash all the tomatoes well under running water and chop them into small pieces.
  2. Blend them into a fine paste.
  3. Take a muslin cloth and pour blended tomato puree in it.
  4. Squeeze it well to filter out all the tomato concentrated juice.
  5. Take a deep frying and heat 2 tsp olive oil in it.
  6. Add mashed garlic and saute for about 2 minutes.
  7. Add the concentrated tomato juice with black pepper and salt.
  8. Simmer on a medium flame after adding 500 ml of water in it and continuously stir it till it is reduced to half.
  9. Cut each bread slice into two halves and sprinkle shredded cheese on one piece.
  10. Cover it with another price and grill in a preheated oven for about 3 minutes at 150 degrees.
  11. Take out soup in a serving bowl and garnish with chopped basil leaves.
  12. Serve hot with grilled cheese toast.
