Basil Fried Rice with Bell Peppers and Chicken

If you regularly follow this food blog, you must be already aware that I simply love the combination of chicken and rice. Today's recipe includes both of them but with a twist. I've used some herbs with generous amount of bell peppers to give it a unique taste. If some of the herbs are not available in your area, you can use a local substitute, if applicable. Although my family prefers extremely spicy fried rice, I've kept this one bit mild. Apart from basil, do not forget to use fresh mint leaves for added flavor. Chicken used in this recipe can be easily replaced with seasoned shrimps. If you're a vegetarian, use cottage cheese to complete the recipe. Let's make this mouth watering rice preparation quickly.

Wholesome chicken and bell pepper rice platter

Make this wholesome and delicious fried rice preparation which consists of boneless chicken chunks and loads of bell pepper dices making it a complete meal.

Preparation Time: 30 minutes
Cooking time: 30 minutes
Servings: 6

Ingredients:
  • 500 gm boneless chicken
  • 3 cups long grain rice
  • 1/4 cup basil leaves (chopped)
  • small bunch of fresh mint leaves
  • 2 tsp ginger garlic paste
  • 1 small onion (chopped)
  • 2 tsp red curry paste
  • 2 green cardamoms
  • pinch of turmeric powder
  • 1 cup red & green bell peppers (chopped)
  • 2 green chilies (finely chopped)
  • 4 tsp olive oil
  • salt to taste

Instructions:

  1. Wash chicken pieces well with normal water and keep aside.
  2. Soak rice in lukewarm water for about 10 minutes.
  3. Heat olive oil in a deep frying pan.
  4. Add chopped onions and saute till they turn light pink.
  5. Add ginger garlic paste and stir fry for about 2 minutes.
  6. Add whole green cardamoms, turmeric powder and red curry paste with quarter cup of water.
  7. Simmer for about 4 minutes till water is reduced.
  8. Add chicken, green chilies, salt, basil and mint leaves.
  9. Stir fry on a high flame for about 3 to 4 minutes.
  10. Add bell peppers and saute for 2 more minutes.
  11. Drain the water from soaked rice and add to the pan.
  12. Add 3 glasses of water and cover the lid.
  13. Simmer for about 12 to 15 minutes.
  14. Garnish with lime slice and serve hot.
