This is yet another kebab recipe made from finely minced lamb meat. I've also used generous amount of parsley and green onions to give them a completely different flavor. These kebabs taste best when consumed with a hot homemade garlic sauce. And if you want to enjoy the real flavor, roast them on a charcoal grill and serve absolutely hot. While making this recipe, make sure you remove extra moisture from the minced lamb else kebabs won't hold up nicely while you roast them on the grill. To enhance the flavor, you can also add chickpea flour in this recipe. For best results, keep the seasoned minced lamb overnight in a refrigerator so that all the flavors are absorbed well by the meat.

Spicy and juicy lamb kebab skewers

Relish these mouth watering lamb kebabs preparation seasoned with hot and spicy herbs to give it a unique flavor and texture to curb your hunger in no time.

Ingredients:
  • 500 gm lamb meat (finely minced)
  • 3 to 4 green onion leaves
  • small bunch of fresh parsley
  • 2 tsp poppy seeds paste
  • 2 whole red peppers (dried and roasted)
  • 2 tsp ginger garlic paste
  • 1 tsp lime juice
  • 4 tsp onion paste
  • 2 tsp hung curd
  • pinch of white pepper powder
  • 1 tsp cumin seeds powder (roasted)
  • 1/4 tsp green cardamom powder
  • 1 green chili (finely chopped)
  • oodles of extra virgin olive oil
  • salt to taste

Instructions:

  1. Washed minced lamb meat under running water and hang it in a muslin cloth to remove all the moisture.
  2. Finely chop both parsley and green onion leaves.
  3. Coarsely grind both dried and roasted red chilies.
  4. Take a large mixing bowl and add minced lamb to it.
  5. Add hung curd, poppy seeds paste, red pepper flakes, ginger garlic paste, lime juice, onion paste, white pepper powder, cumin seeds powder, green cardamom powder and salt to the minced lamb.
  6. Mix it well and refrigerate for about 15 minutes.
  7. Add 5 tsp extra virgin olive oil, chopped parsley, green onion leaves and green chili to the seasoned minced lamb.
  8. Mix it well again.
  9. Take skewers and apply minced lamb to form the shape of a kebab.
  10. Roast on a charcoal grill till they are golden brown.
  11. Serve hot with garlic sauce and onion rings.
