Sea food is always cherished by my family as it is light as well as tasty at the same time. Today we're making grilled king scallops with a delicious sauce. If this variety of scallop is not available in your area, you can replace it with red shrimps. Although I've used walnut and fennel as the sauce base, you can further enrich it with almonds as well. These scrumptious scallops must be grilled just before serving as they taste best when consumed hot and fresh. You can also serve them as a starter or can serve with hot steamed rice. Since scallops are very tender and moist, you must take every care while grilling them to avoid any kind of overcooking. Use air tight container to refrigerate these tasty scallops.

Nutritious scallops in creamy walnut sauce

Nothing tastes better than grilled seafood served with a creamy sauce having a nutty flavor like this unique grilled scallops preparation made with ease.

Preparation Time: 20 minutes
Cooking time: 25 minutes
Servings: 4

Ingredients:
  • 500 gm king scallops
  • 1 cup walnuts
  • 3 to 4 tsp fennel seeds
  • 1 tsp poppy seeds
  • pinch of corn starch
  • 1/4 tsp white vinegar
  • 1/4 tsp black pepper powder (coarsely ground)
  • 1/2 tsp roasted cumin seeds powder
  • pinch of white pepper powder
  • pinch of dried thyme
  • few drops of sesame oil
  • 5 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Wash all the scallops and sprinkle corn starch, black pepper powder and salt on it.
  2. Keep aside for at least 10 minutes.
  3. Blend walnuts into a fine powder and take out in a bowl.
  4. Similarly blend both fennel and poppy seeds and mix with walnut powder.
  5. Add white vinegar, cumin seeds powder, white pepper powder, dried thyme, sesame oil, 2 tsp olive oil and salt.
  6. Mix it well and keep aside.
  7. Heat a shallow frying pan and add 1/4 water in it.
  8. When it starts boiling, switch the flame to low and add the sauce ingredients.
  9. Simmer for about 10 minutes and switch off the flame.
  10. Grease a baking tray and arrange seasoned scallops on it.
  11. Grill for about 7 to 8 minutes in a preheated oven at 200 degrees.
  12. Take a serving plate and pour walnut sauce in the center.
  13. Arrange grilled scallops on top of sauce and garnish with basil or cilantro.
  14. Serve hot with a dip or steamed rice.
