Garlic is used in different ways in chicken recipes. In today's recipe, garlic is used in both paste and whole form. The buttery pepper sauce used for this chicken is quite spicy and creamy at the same time. Use a small tender chicken for this recipe so that the pepper sauce is absorbed deep within the meat. Almonds are used to get the creamy and buttery texture. You can use the same method for turkey or duck meat too. I've grilled this chicken in a microwave. If you have a charcoal grill, you can directly grill it to get the best flavor and aroma. You can also stuff some vegetables in this chicken to make a slightly different variant of this recipe. This scrumptious chicken goes well with fried rice and chips.

Mellow flavored almond flavored chicken

Try this exotic chicken preparation flavored with loads of garlic and further enhanced with almond and pepper sauce giving it an irresistible texture.

Ingredients:
  • 2 kg tender chicken (chopped into two halves)
  • 10 to 15 garlic cloves
  • 5 tsp garlic paste
  • 50 gm almond paste
  • 1/4 cup almonds (blanched and chopped)
  • 1/2 tsp balsamic vinegar
  • 2 tsp lime juice
  • 2 tsp onion paste
  • 1 tsp ginger garlic paste
  • 1/2 tsp red curry paste
  • 1/4 tsp white pepper powder
  • 1/4 cup fresh cream
  • 1 tsp honey
  • oodles of olive oil
  • salt to taste

Instructions:

  1. Wash chicken halves thoroughly and pierce them with a fork.
  2. Heat 2 tsp olive oil in a shallow frying pan.
  3. Add whole garlic cloves and blanched almonds.
  4. Saute for about 2 minutes on a very low flame. Keep aside.
  5. Take a large glass bowl.
  6. Add fresh cream, almond paste, balsamic vinegar, lime juice, onion paste, ginger garlic paste, red curry paste, white pepper powder, honey, salt and 1/4 cup of extra virgin olive oil in it.
  7. Mix it well and add chicken halves in this marinade.
  8. Apply it well both inside and out on the chicken pieces.
  9. Cover the bowl with aluminum foil and refrigerate for about 15 minutes.
  10. Take a large baking tray and grease it well with olive oil.
  11. Place marinated chicken pieces and sprinkle lightly stir fried almonds and garlic cloves on top.
  12. Pour the leftover marinate on top.
  13. Grill in a preheated oven for about 10 minutes at 200 degrees.
  14. Serve hot with salad and rice.
