Pineapple is one of the versatile fruits that can be used in different kinds of recipes. Today's fried rice recipe is powered by mint and pineapple giving you a totally unique flavor. This fried rice is easily digested due to generous amount of mint present in them. Pineapple adds the fruity and tangy flavor to liven up your taste buds. Remember; do not use extremely raw pineapple pieces with this recipe as it may spoil the texture. That's why I've used mint to balance the extreme tangy flavor of the pineapple. You must also use unpolished rice for this recipe as they blend very well with added ingredients. Due to the presence of pineapple in the fried rice, you must consume it on the very same day.

Tangy and sharp pineapple rice

Nothing tastes better than flavored rice preparation which includes fruity flavor and select herbs to give it a pungent and sharp flavor that’s beyond words.

Preparation Time: 30 minutes
Cooking time: 30 minutes
Servings: 6

Ingredients:
  • 3 cups long unpolished rice
  • 300 gm pineapple pieces
  • bunch of fresh mint leaves
  • 4-5 whole black peppers
  • 1 bay leaf
  • 1" cinnamon stick
  • 4-5 green cardamoms
  • 1 large onion (chopped)
  • 2 green chilies (chopped)
  • 2 tomato (chopped)
  • pinch of paprika
  • 4 tsp olive oil
  • salt to taste

Instructions:

  1. Wash rice under running water and soak them for about 15 minutes.
  2. Cut pineapple into 2" pieces and keep aside.
  3. Chop the mint leaves and keep aside.
  4. Heat 4 tsp olive oil in a large frying pan.
  5. Add whole black pepper, cinnamon stick, bay leaf and green cardamoms in it.
  6. Saute for about 2 minutes.
  7. Add chopped onions and stir fry on a low flame till they turn light pink.
  8. Add chopped tomatoes and green chilies.
  9. Saute for 2 more minutes.
  10. Add soaked rice, paprika and salt.
  11. Add 3 glasses of water and mix well.
  12. Close the lid and simmer for about 6 to 7 minutes.
  13. Open the lid and add pineapple pieces and chopped mint.
  14. Stir and mix well and close the lid again.
  15. Simmer for 5 more minutes.
  16. Garnish with mint leaves and serve hot with a spicy vegetable stew.
