This spicy chicken salad is ideal for evening cocktail parties. Combined with cranberries and mayo, it will tantalize your taste buds without any doubt. I've used shredded chicken for this recipe, but you can use seasoned chicken breast too. Inclusion of both curry paste and cayenne pepper makes it quite hot. You can omit peppers for a milder version. As always, I'll advice you to consume this salad on the same day of preparation. You can make this salad with leftover chicken pieces too. This is an ideal way to reprocess it in an interesting way. You can also add avocado in this salad to make it more nutritious and healthy. Don't forget to use generous amount of extra virgin olive oil in this salad.

Spicy shredded chicken salad

Try this unique combination of chicken chunks and fruit while making this spicy and delicious salad which is going to tantalize your hungry taste buds.

Preparation Time: 20 minutes
Cooking time: 10 minutes
Servings: 5

Ingredients:
  • 400 gm shredded chicken
  • 1 cup cranberries
  • 1/2 cup celery (chopped)
  • 2 garlic cloves (mashed)
  • 1 tsp curry powder
  • pinch of turmeric powder
  • 2 cayenne pepper (finely chopped)
  • 1 tsp mayonnaise
  • 1 tsp lime juice
  • 5 to 6 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Wash and cut cranberries into 4 pieces each.
  2. Heat 3 tsp olive oil in a shallow frying pan.
  3. Add garlic paste and saute for about a minute.
  4. Add shredded chicken and stir fry for about a minute.
  5. Add curry powder, cayenne pepper and turmeric powder.
  6. Saute for about 3 to 4 minutes on a low flame.
  7. Add fresh lime juice, salt and cranberries.
  8. Stir fry for about a minute and remove from the flame.
  9. Add mayonnaise, celery and 2 tsp extra virgin olive oil.
  10. Serve with crunchy potato chips.
