The golden rule of making a good salad is to make it colorful with a unique dressing. Today's salad recipe is very much colorful and is rich in protein as well as in fiber. If watercress used in this salad is not available in your locality, you can either use lettuce or can use baby spinach. The dressing used in this salad is optional as the salad itself is quite tasty. One can also add some fruits in this salad provided you consume it on the very same day. The mushrooms added in this salad are slightly sautéed before adding in the salad. If you prefer, you can either bake them or can add in the raw form too. You can easily refrigerate this tasty salad overnight and can serve chilled in the morning breakfast.

Nutritious and colorful chilled salad

Make this colorful and versatile salad preparation that consists of sprouts along with diced mushrooms and carrots making it a wholesome salad recipe.

Preparation Time: 20 minutes
Cooking time: 10 minutes
Servings: 6

Ingredients:
  • 200 gm bean sprouts
  • 200 gm mushrooms (chopped)
  • 1/2 cup carrots (sliced)
  • 1/2 cup cherry tomatoes (chopped)
  • 1/4 cup red onion (sliced)
  • 300 gm watercress (chopped)
  • 2 to 3 green chilies (finely chopped)
  • pinch of malt vinegar
  • few drops of sesame oil
  • 6 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Heat 2 tsp olive oil in a shallow frying pan.
  2. Add chopped mushrooms and saute for about 2 minutes on a low flame. Keep aside.
  3. Take a large salad bowl.
  4. Add bean sprouts and stir fried mushrooms in it.
  5. Toss well and add carrots, tomatoes and red onion.
  6. Mix well and continue with green chilies and watercress.
  7. Take a small bowl and add 4 tsp extra virgin olive oil in it.
  8. Add sesame oil, malt vinegar and a pinch of salt in it.
  9. Mix well with a spoon.
  10. Pour this dressing on the salad and mix well with a wooden spatula.
  11. Refrigerate for about an hour and serve chilled with a main course delicacy.
