I always try to combine baked beans with several other ingredients to make a wholesome meal for my family. They're rich in proteins and are easily digested, if cooked properly. If you're a vegetarian, you can omit egg and bacon and can replace it with some stir fried colorful vegetables. You can also add white beans and chickpeas to this recipe to get a unique flavor. These beans go very well with steamed rice. Ideally it should be consumed in dinner, but you can take it in breakfast as well. You can also make them in bulk and can refrigerate it for few days. Delicious combo of beans and bacon

Try out this delicious combination of flavorful baked beans with irresistible bacon slices served with hot poached egg which makes it a complete meal.

Preparation Time: 25 minutes
Cooking time: 40 minutes
Servings: 4

Ingredients:
  • 300 gm red beans
  • 300 gm bacon (thin slices)
  • 4 eggs
  • 1/2 tsp black pepper (coarsely ground)
  • 2 tsp curry paste
  • 1/4 tsp mustard paste
  • 2 onions (finely chopped)
  • 1 tsp ginger garlic paste
  • pinch of cinnamon powder
  • 2 tsp fresh cream
  • 1/4 tsp oregano (powdered)
  • few drops of soy sauce
  • 1/4 cup Parmesan cheese
  • 1/2 cup cabbage (finely shredded)
  • 5 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Soak red beans overnight in lukewarm water.
  2. In morning, cook them in pressure cooker for about 10 minutes and drain all the water.
  3. Heat 4 tsp olive oil in a frying pan.
  4. Add chopped onions and ginger garlic paste.
  5. Saute for about 3 to 4 minutes till onions becomes light pink.
  6. Add mustard paste and stir fry for 2 more minutes.
  7. Add half cooked red beans, curry paste, oregano, cinnamon powder, fresh cream, soy sauce and a pinch of salt.
  8. Saute for about 2 minutes and add 1 cup of water.
  9. Close the lid and simmer for about 10 minutes on a low flame.
  10. Add cheese and toss well.
  11. As soon as the cheese melts down you can switch off the flame.
  12. Transfer beans in a greased tray and bake them in a preheated oven at 180 degrees for about 5 minutes.
  13. Heat 1 tsp olive oil in a shallow frying pan and saute bacon slices from both sides.
  14. Season them with black pepper and salt.
  15. Quickly make poached eggs in boiling water for the topping. Sprinkle some black pepper powder and salt on them.
  16. Place baked beans on the plate and garnish with chopped cabbage and seasoned bacon.
  17. Place poached egg on top and serve immediately.
