Grilled Tuna with Squash and Tomatoes

If you don't like squash, try this recipe and I'm sure you'll start loving it. There are several types of tuna available in the market and you can use them in different forms. If you don't like tuna, you can use salmon or a fresh water fish as well. Although I've used a simple and mild seasoning for tuna, you can also prepare a separate sauce for grilled pieces. To make it a bit crunchy, you can also consider adding some nuts to the squash and tomato base. While grilling tuna fillets, use a toothpick to check whether it's cooked or not! If a toothpick goes inside easily and comes out clean, your fish is ready for consumption. You can also serve seasoned fried rice with this recipe that includes shrimps and chicken.

Delicious grilled tuna fillet with squash

Try this exotic grilled tuna fillet recipe served on a bed of spicy and delicious squash dices and tomato slices flavored with pungent spices and herbs.

Preparation Time: 30 minutes
Cooking time: 35 minutes
Servings: 4

Ingredients:
  • 3 to 4 tuna fillets
  • 300 gm squash (diced)
  • 250 gm tomatoes (sliced
  • 1/2 tsp dried herbs
  • 1/2 tsp black pepper powder (coarsely ground)
  • 2 green chilies (finely chopped)
  • 1 small onion (sliced)
  • 2 cloves garlic (mashed)
  • 1/4 tsp paprika
  • 5 tsp olive oil
  • 2 tsp red curry paste
  • fresh basil for garnishing
  • salt to taste

Instructions:

  1. Sprinkle salt, dried herbs and black pepper powder on tuna fillets and rub them well across all sides.
  2. Place in a large plate and cover with aluminum foil.
  3. Refrigerate seasoned fillets for about 15 minutes.
  4. Heat 2 tsp olive oil in a shallow frying pan.
  5. Add sliced onions and saute for about 2 to 3 minutes till they turn light pink.
  6. Add mashed garlic and stir fry for 2 more minutes on a medium flame.
  7. Add green chilies and squash.
  8. Stir fry on a high flame for a minute and add paprika, sliced tomatoes and red curry paste.
  9. Fry for 2 more minutes and add 1 cup of water.
  10. Simmer for about 10 minutes with a covered lid.
  11. Take out seasoned tuna fillets from the refrigerator.
  12. Generously apply olive oil on both sides of the fillets.
  13. Grill all the fillets till they turn light pink.
  14. Place spicy squash and tomato base on the serving plate.
  15. Top with grilled tuna fillet.
  16. Garnish with basil leaves and serve with bread or rice.
