When it's raining, nothing tastes better than fried snacks and that too with tea. How about tasty and crunchy cauliflower balls? To make them crunchy, I've used semolina and breadcrumbs with a spicy seasoning. You can also apply the same process with potatoes and onions. These fried balls should be consumed piping hot with a spicy dip. If you want a moist coating on top instead of a crunchy layer as made in this recipe, you can replace semolina and breadcrumbs with chickpea flour. You can also fill mozzarella cheese in these balls to compliment the crunchy shell. Addition of roasted cumin seeds can make this recipe more delicious. Since these balls are deep fried, use high flame during the frying process.

Lip smacking cauliflower fritters

Do make this unique and delicious cauliflower fritters recipe coated with crisp breadcrumbs and loads of parsley which gives it a lip smacking and spicy flavor.

Servings: 6

Ingredients:
  • 500 gm cauliflower
  • 8 to 10 white bread slices
  • 1/2 cup semolina
  • 3 to 4 garlic cloves (mashed)
  • bunch of fresh parsley (finely chopped)
  • 1/4 tsp dried herbs
  • pinch of paprika
  • 1/2 tsp white pepper powder
  • 2 green chilies (finely chopped)
  • oil for deep frying
  • salt to taste

Instructions:

  1. Wash cauliflower with cold water and cut into 1" small pieces.
  2. Cut the outer layers of each bread slice and grate them. Keep aside.
  3. Take a large bowl and put all cauliflower pieces in it.
  4. Add semolina, grated bread, dried herbs, mashed garlic, green chilies, chopped parsley, paprika powder, white pepper powder and salt.
  5. Mix it well and make a layer of seasoned semolina and breadcrumbs on cauliflower pieces by pressing with hand.
  6. Heat oil in a deep frying pan.
  7. Keep the flame high and fry all cauliflower balls till they turn light golden brown.
  8. Place all the fried balls on an oil absorbing paper.
  9. Serve hot with a spicy and tangy dip.
