Unlike using regular tomato sauce which is cooked well before we use it in different recipes, I've used completely raw tomato sauce for this preparation. Again, I'll prefer cherry tomatoes for making this raw sauce. You can use the same method for spaghetti too. This pasta recipe is very mild and if you prefer a spicy version, you can sprinkle some black pepper powder on top. If you don't like Fettuccine, you can use your favorite pasta variety to make this tangy recipe. This preparation is ideal for breakfast when you have limited time and want a delicate pasta recipe. You can also add some green veggies to make it more colorful and rich in fiber. So here we go to make this scrumptious pasta!

Delicate and light pasta with tomato sauce

Do make this light yet flavorful pasta preparation which includes tasty raw tomato sauce seasoned with spicy and aromatic ingredients for a unique aroma.

Cooking time: 15 minutes
Servings: 4

Ingredients:
  • 300 gm Fettuccine pasta
  • 250 gm fresh cherry tomatoes
  • 1 garlic clove paste
  • 1 tsp unsalted white butter
  • pinch of white pepper powder
  • 1 red chili paste (remove seeds)
  • fresh basil leaves (chopped)
  • 2 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Cook pasta in boiling water for about 5 minutes.
  2. Drain remaining water and apply olive oil on pasta and keep aside.
  3. Blanch and remove the skin of all the tomatoes.
  4. Make a fine paste of tomatoes in a blender.
  5. Saute garlic paste for about 2 minutes in 1/4 tsp of olive oil.
  6. Add lightly fried garlic paste, unsalted white butter, white pepper powder, chili paste and salt in the raw tomato paste.
  7. Add 1 tsp extra virgin olive oil and stir raw tomato sauce for 2 to 3 minutes.
  8. Add the seasoned tomato sauce to the boiled pasta.
  9. Mix it well and take out in a serving bowl.
  10. Garnish with chopped basil leaves and serve hot.
