Although I love to include lots of fruits in my salad preparations, making a salad with the combination of veggies, pulses and cereal is a different experience. The latter form of salad is comparatively more nutritious and greatly helps in keeping your digestive tract in a good condition. Salad dressing also plays a big role in such kinds of salads as they're bit raw and requires a form of seasoning to enhance the flavor. The following salad is more popular in Middle East and in some parts of the Mediterranean region. If you cannot find bulgur wheat in your locality, you can replace it with roasted oats. You can also add some fried egg noodles or fresh peaches to this salad to give it a unique look and taste.

Nutritious bulgur wheat and cucumber salad

Do make this extremely nutritious and fiber packed salad made from cucumber, bulgur wheat and chickpea which are seasoned with a sharp salad dressing.

Preparation Time: 20 minutes
Cooking time: 30 minutes
Servings: 5

Ingredients:
  • 200 gm bulgur wheat
  • 300 gm cucumber (diced and sliced)
  • 2 tomatoes (sliced)
  • 1 cup chickpeas
  • pinch of white pepper powder
  • 2 tsp olive oil
  • few drops of cider vinegar
  • 1 green chili (finely chopped)
  • 1/2 tsp lime juice
  • pinch of dried oregano
  • fresh coriander leaves (chopped)
  • salt to taste

Instructions:

  1. Soak chickpeas overnight in lukewarm water.
  2. Cook them in a pressure cooker for 10 minutes with 2 glasses of water.
  3. Drain extra water and keep aside.
  4. Boil bulgur wheat in a deep pan for about 15 minutes with a glass of water.
  5. Drain left water and slightly roast them in a non stick pan.
  6. Take a large salad bowl.
  7. Mix bulgur wheat, cucumber, tomatoes and chickpeas in it.
  8. Mix few drops of cider vinegar and lime juice in olive oil and add in salad.
  9. Add chopped coriander, white pepper powder, green chilies and dried oregano to the salad.
  10. Add a pinch of salt and toss well.
  11. Mix all the ingredients well with a wooden spatula.
  12. Serve with a main course delicacy.
