Cottage cheese is one of the best sources of protein here in India. It is widely consumed across the whole country. No wedding menu is complete without it. There are several grilled variants of cottage cheese in North India which I'll share some other day. Today's recipe is a spicy cottage cheese preparation with lots of herbs. It goes well both with rice and bread. In fact, you can also take it as a starter. If your cottage cheese gets hard from the edges during making this recipe, it means it's not of good quality. Best cottage cheese is made from cow's milk and if you can get the fresh supply nothing can be better than that. Let's make this recipe that's not only visually appealing but tastes great as well.

Ingredients:
  • 400 gm fresh cottage cheese
  • 5 tsp onion paste
  • 1 tsp ginger garlic paste
  • 1 tsp dried mint leaves (crushed)
  • bunch of cilantro (finely chopped)
  • 1/2 tsp red chili flakes
  • 1/2 cup fresh cream
  • 1/4 tsp black pepper powder
  • 1/2 tsp roasted cumin seeds (coarsely ground)
  • 2 green chilies (blended into paste)
  • 1 tsp lime juice
  • pinch of nutmeg powder
  • 1 tomato puree
  • pinch of cinnamon powder
  • 5 tsp cooking oil
  • salt to taste

Instructions:

  1. Cut cheese into slices and keep aside.
  2. Take a large wok and heat 5 tsp oil.
  3. Add onion and green chili paste and saute for about 3 minutes.
  4. Add ginger garlic paste and tomato puree and stir fry on a high flame for about 2 more minutes.
  5. Bring down the flame to medium and add fresh cream, black pepper powder, roasted cumin seeds and chili flakes.
  6. Saute for about 2 more minutes.
  7. Add cottage cheese and stir fry for about a minute.
  8. Add lime juice, nutmeg powder and cinnamon powder.
  9. Add half a cup of water and fry for two more minutes.
  10. Add dried mint leaves, chopped cilantro and salt.
  11. Mix well and cover the lid.
  12. Simmer for about 5 minutes and bring down from the flame.
  13. Serve hot with steamed rice or garlic bread.
