Cheesy Potato Salad with Green Onions and Mint

Potatoes can be included in a salad in various forms. You can either include them in baked or grilled form or you can include them in boiled or mashed form. Potato salad should be consumed on the same day as it cannot be refrigerated for long time. The recipe given here comes out best when you're using fresh small potatoes with their skin. You can also add carrots and tomatoes with this salad to make it more colorful. If you don't like mint leaves, use finely chopped coriander leaves for added flavor. Instead of using a dressing for this salad, I've used a regular seasoning of few mild spices. Potato salad with roasted or baked oats is in itself a complete meal and can be consumed at any time of the day.
