If you've ever tried Asian cuisine or the food from Middle East region, you must have encountered non vegetarian kebabs. They come in different forms and are loaded with the most aromatic and pungent spices of the subcontinent. The following recipe is a south Asian version of beef kebabs that are marinated in a dip and are prepared on a charcoal grill. Since this is a spicy version, people who want to avoid the heat can reduce the amount of peppers in the ingredients list. You can use this method for chicken and lamb kebabs too. These kebabs taste best when they are consumed hot with naan. You can also add different kinds of vegetables within skewers to give more color to this recipe.

Juicy and tender beef kebabs

Drool over these spicy, tangy and extremely delicious beef kebabs preparation grilled on hot charcoal fire to perfection to make you salivate uncontrollably.

Preparation Time: 35 minutes
Cooking time: 25 minutes
Servings: 8

Ingredients:
  • 1 kg boneless beef chunks (2" pieces)
  • 100 gm onion paste
  • 5 tsp poppy seeds paste
  • 8 to 10 dried red peppers
  • 3 tsp ginger garlic paste
  • 1/4 tsp white pepper powder
  • 1 tsp turmeric powder
  • 1/2 cup hung curd
  • 2 tsp fresh lime juice
  • 3 to 4 black cardamom (powdered)
  • 3 tsp imperial cumin (powdered)
  • few drops of edible orange color
  • 10 tsp vegetable oil
  • salt to taste

Instructions:

  1. Wash beef chunks under running water and pierce them well with a fork.
  2. Take a large bowl and add hung curd to it.
  3. Add poppy seeds paste, onion paste, ginger garlic paste, white pepper powder, turmeric powder, lime juice, cardamom powder, cumin powder and orange color.
  4. Mix it well with the curd and keep aside.
  5. Slit the red peppers and take out all the seeds.
  6. Coarsely grind in a blender and mix it in curd marinade with 4 tsp of oil.
  7. Finally add salt to the marinade and mix again.
  8. Add pierced beef chunks to the marinade and refrigerate them for about 15 minutes.
  9. Take kebab skewers and grease them well.
  10. Add 10-12 beef chunks in a single skewer.
  11. Grill them on a charcoal grill by continuously rotating till they turn reddish brown.
  12. Apply oil, if required during the grilling process.
  13. Serve hot with naan and salad.
