Bell peppers are one of the best vegetables that can be stuffed very easily. Today's recipe includes a tasty and fulfilling stuffing for bell pepper cups. Although I've used green bell peppers in this preparation, you can mix various colors to make it more attractive. If you want to add or change the stuffing, choose the ingredients carefully. Using wet substances may spoil the cup shape and your recipe will be ruined even before it is ready for serving. In simple words, make sure to remove extra moisture from the stuffing before filling it in the bell pepper cups. Adding few dry fruits within stuffing will make this preparation more crunchy and nourishing. Let's quickly make these tasty pepper cups.

Fulfilling green bell pepper cups

Ingredients:
  • 8 large green bell peppers
  • 250 gm button mushrooms
  • 2 large tomatoes (chopped)
  • 1 onion (finely chopped)
  • 2 garlic cloves (finely minced)
  • 1/4 tsp black pepper (coarsely ground)
  • 1/4 tsp paprika powder
  • 1/4 tsp dried oregano
  • 1/2" ginger piece (finely chopped)
  • 50 gm cottage cheese
  • 1/4 tsp turmeric powder
  • 1 green chili (finely chopped)
  • 3 tsp cooking oil
  • salt to taste

Instructions:

  1. Wash all bell peppers thoroughly and cut the top part to make a cup.
  2. Remove all seeds and flesh from inside and keep aside.
  3. Cut mushrooms and cottage cheese into small pieces.
  4. Heat 2 tsp cooking oil in a shallow frying pan.
  5. Add onions and saute for about 2 minutes.
  6. Add minced garlic, ginger and green chilies.
  7. Stir fry for about a minute on a medium flame.
  8. Add cottage cheese, mushrooms, turmeric powder and salt.
  9. Saute for about a minute and add tomatoes, black pepper, paprika powder and dried oregano.
  10. Stir fry for about 2 to 3 minutes and bring down from the flame.
  11. Apply a layer of oil inside bell peppers cups through a brush.
  12. Fill the stuffing and grill in a preheated oven for about 6 minutes at 200 degrees.
  13. Serve hot with soup or fried rice.
