Grilled Sable Fish with Black Bean Sauce

The versatility of black bean sauce makes it a popular choice for including in different types of main course meals. Today's recipe is for all the fish lovers who like grilled tender fish fillets. I've used sable fish for this preparation which can be replaced by any fresh water fish. If you don't like black bean sauce, a mint flavored dip goes very well with this fish. This preparation will taste best if you make it on a charcoal-based grill. Do not pierce the fish pieces before grilling as it may break them during the process. If you want to experiment, you can also combine this fish with seasoned shrimps and some lightly shallow fried veggies. So let's make this delicate and aromatic main course preparation.

Lightly flavored sable fish fillets

Relish this delicately grilled sable fish fillets with equally delicious black bean sauce made with select spices to give the entire dish an amazing flavor.

Preparation Time: 20 minutes
Cooking time: 30 minutes
Servings: 5

Ingredients:
  • 4-5 sable fish fillets
  • 2 tsp fresh lime juice
  • 2 tsp dried herbs
  • pinch of white pepper powder
  • 1 tsp balsamic vinegar
  • 2 cups black beans
  • 3 tsp sesame oil
  • 2 tsp ginger garlic paste
  • 2 green chilies (finely minced)
  • 1/2 tsp red chili flakes
  • 3 tsp soy sauce
  • 2 tsp cider vinegar
  • pinch of black pepper powder
  • 2 cups chicken or vegetable stock
  • 1 tsp cornstarch
  • 5 to 6 tsp olive oil
  • salt to taste

Instructions:

  1. Soak black beans overnight and wash them thoroughly in the morning.
  2. Pressure-cook them for about 15 minutes.
  3. Drain extra water and mash them through a spoon or spatula.
  4. Heat sesame oil in a deep frying pan.
  5. Add ginger garlic paste and saute for about two minutes.
  6. Add green chilies and stir fry for one more minute.
  7. Add mashed black beans, soy sauce, cider vinegar, black pepper powder, red chili flakes and salt.
  8. Stir for about 2 minutes and add chicken or vegetable stock.
  9. Simmer on a low flame for about 10 minutes with a covered lid.
  10. Mix cornstarch in little water and add it to the black bean sauce.
  11. Cook on low flame for few minutes till thick consistency is reached.
  12. Apply lime juice, dried herbs, white pepper powder, balsamic vinegar and salt on fish fillets.
  13. Apply olive oil on the fillets and grill them on both sides till they're light brown.
  14. Pour black bean sauce in a serving plate and top with a grilled sable fish fillet.
  15. Serve hot with your favorite rice preparation.
